Matteo Gallizio is passionate about pasta, and only the best will do.
As a fourth generation food industry executive, Matteo first created a successful Gelato business in northern, Italy.
In 2016, Matteo and his lovely wife, Alessandra (a doctor focused on healthy eating), relocated to Austin to raise their family.
In the spring of 2017, Matteo returned to his love of pasta by establishing La Dolda Artisanal Pasta — inspired by the many delicious family recipes shared by generations at their Italian country house called “La Dolda”. Located in the Emilia-Romagna region of northern Italy, famous for fresh pasta and the birth place of the Bolognese sauce, “La Dolda” was a summer retreat for the family and a place to gather over delicious meals of fresh pasta and local produce.
Today, Matteo is bringing this family experience, and quality obsession for only the best, to Austinites living south of the river through La Dolda Artisanal Pasta.
Patrons may enjoy fresh pasta and sauces made to order for lunch or to take home, as well as several types of dried pasta with gluten-free options.
